Cucumber Peanut Salad

A very cooling and tasty Raita/ Salad that goes very well with Paratha’s and Puri.

 

Ingredients:

Peeled Cucumber – 2

Peanuts – roasted and pounded 1 cup

Sugar – 1 tsp

Salt – 1 tsp

Red chili powder – 1 tsp

Black Pepper powder – 1/2 tsp

Roasted Cumin Powder – 1 tsp

Chopped green chili – 1

Yogurt – 1 cup

Coriander leaves for garnish

 

Tempering:

Mustard seeds – 1/2 tsp

Curry leaves – 5-6 chopped

Oil – 1 tsp

 

Directions:

Peel and Grate the cucumbers and place them in a bowl, without draining or squeezing out the water. Add yogurt, salt, sugar, green chilly and mix. Add crushed peanuts and mix.

For tempering, take 1 tsp oil and heat. Add Curry leaves and mustard seeds.

Now pour this tadka over the salad.

Garnish with coriander and sprinkle some black pepper powder, Cumin powder and red chili powder.

Serve cold.

Methi Aloo Paratha

Methi Aloo Paratha

A very good Breakfast Dish.Pair it with Mango launji, yogurt or any pickle and it is oh so comforting.

Fenugreek has numerous health benefits and tastes good too.

 

Ingredients:

Methi/ Fenugreek leaves – around 1 cup (washed and chopped)

Wheat Flour for kneading dough – around 1 cup

Salt to taste

Red chilli powder – 2 tsp

Minced garlic – 1tsp

Besan – 1/2 cup

Water – as required

Ghee

 

For the Filling:

Boiled and Mashed Potatoes – 2

Green chillies – 2 (chopped finely)

Salt as per taste

Amchur/Mango powder – 1 tsp (Optional)

Paneer 1/2 cup (Optional)

 

Directions:

Knead a dough with all the ingredients except Ghee.

Mash potatoes, Paneer, add green chillies, Amchur powder and salt.Mix well.

Divide the dough in medium shaped balls and roll them out.

Add the potato filling, seal and roll out again into a paratha.

Heat tawa and place the paratha. Smear ghee when the paratha becomes golden brown on both sides.

Coleslaw

Coleslaw
We all love Coleslaw at our home and i make it with some add ons my Style.
 Ingredients:
Shredded Cabbage  1 cup
Shredded Carrot 1/2 cup

Shredded Capsicum  1/2 cup

Dressing :
Cheese Spread 1 tbsp
Mayonaisse 1/2 cup
Milk 2 tsp
Apple cider vinegar 2 tsp
Buttermilk 2 tsp
Salt as per taste
Sugar 1 tsp
Black pepper 1 tsp
Oregano seasoning 1 tsp

Olive oil or Butter 3-4 tsp

Add Ons:
Roasted cashews broken

Raisins

Directions:
In a large Bowl, add Olive oil or butter and all the ingredients mentioned under dressing.
Whisk well and Add Shredded veggies. Toss and add roasted cashews n some raisins.
